Summer Recipe: Easy Potato Salad

Ingredients

  • 3 lbs potatoes – I recommend Yukon golden potatoes, but red potatoes also work.
  • 3 TBSP white wine vinegar
  • 1 ¼ TSP kosher salt
  • 3 celery stalks
  • 5 green onions
  • ¼ C. red onion
  • 2 TBSP chopped fresh dill
  • ½ C. sweet pickle relish
  • ½ C. mayonnaise
  • ½ C. sour cream
  • 3 TBSP yellow mustard
  • 1 TSP celery seed

Instructions

  1. Wash and dry all produce.
  2. Leaving the skins on, add potatoes to a large saucepan of cold water.
  3. Bring the water to a boil and cook for 10 minutes until the potatoes are soft enough to prick with a fork.
  4. Drain, rinse under cold water, and allow to cool enough that you can peel them without burning yourself.
  5. Cut the potatoes into bite-sized pieces and add to a large serving bowl. Season with 2 TBSP white wine vinegar and salt. Set aside.
  6. While the potatoes marinate, slice the celery in half lengthwise.
  7. Thinly slice the celery and green onions, separating the whites and greens.
  8. Mince the red onion.
  9. Roughly chop the dill.
  10. In a second large bowl, combine mayo, sour cream, mustard, celery seed, 1 TBSP white wine vinegar, 3/4 tsp salt, and season with black pepper. Stir until thoroughly combined.
  11. Pour sauce over the potatoes and toss in the celery, green onion, red onion, and sweet pickle relish.
  12. Stir until thoroughly coated.
  13. Cover with a lid or plastic wrap and chill in the fridge until ready to serve.
