Original recipe adapted from one found on LittleEarthlingBlog.com

  • 1 lbs. sliced roast beef
  • 2 onions
  • 4 green peppers
  • 1 loaf garlic bread
  • 6 slices pepper jack cheese
  • 2 TBSP vegetable oil

  1. Wash and dry all your produce.
  2. Thinly slice the onion and peppers.
  3. In a cast-iron skillet, heat a drizzle of oil over your campfire.
  4. Once the oil is hot enough to pop when you sprinkle it with water, add the onions.
  5. Cook until softened and beginning to brown.
  6. Toss in the peppers and cook again until just soft.
  7. Set the garlic bread on the aluminum foil and layer both sides with roast beef.
  8. Add the onions and peppers and top with six slices of cheese.
  9. Place the top slice of garlic bread on the top and wrap in foil. You’ll want to double-layer the foil to prevent burning.
  10. Add the packets to the fire, setting them near the coals or on the grill grate. Cook for 10 minutes or until the cheese has completely melted.
  11. Serve hot!
